1 whole butternut squash
1 large red onion, minced
3 garlic cloves, minced
1/3 cup of almond milk
1/2 teaspoon of nutmeg powder
feta cheese, optional
salt to taste
black pepper to taste
Cut butternut squash into cubes and add it to a pot with boiling water.
Cut the red onion and garlic cloves, and cook them with a teaspoon of olive oil.
Once the butternut squash has cooked enough, take it to the blender.
Add red onion and garlic cloves, almond milk and nutmeg while blending. Add salt and pepper to taste.
Garnish with some feta cheese and parsley.
