Creamy Vegan and GF friendly Mac-n-Cheese

Serves 3-4


-1 package of chickpeas pasta

-1 1/2 cups of raw cashews

-1/4 cup nutritional yeast

-1 lemon

-2 cups of spinach

-a handful of cherry tomatoes

-5-6 Brazil nuts

-1/2 tbsp olive oil


1. Add one package of chickpea pasta to 16 cups of boiling water and boil pasta for about 8 minutes.

2. In a blender or food processor add cashews, the juice of one lemon, nutritional yeast, salt and pepper to taste, and one cup of water. Blend until creamy.

3. On medium heat, sauté spinach and tomatoes in 1/2 a tbsp of olive oil. Add salt and pepper to taste.

4. Finely chop the brazil nuts.

5. In a large bowl mix together the cashew cheese sauce and pasta. Then add in your veggies and brazil nuts to top it off!

Optional to add grilled chicken for extra protein.
