Crispy Seared Zucchini

Serves 2-4


◦ 3-4 medium sized zucchinis

◦ 1 tablespoon olive oil

◦ 1 teaspoon salt

◦ 1/2 teaspoon pepper

◦ 1/2 teaspoon garlic powder


1. Cut a whole zucchini long-ways into thirds.

2. Sprinkle salt onto zucchini and let it sit for 5-7 minutes to soak up the excess water from the zucchini.

3. As zucchini is sitting, heat olive oil in a cast iron skillet over medium/high heat.

4. Wipe zucchini with a towel to get rid of the extra water.

5. Make diagonal cuts, going both ways, into the zucchini but not slicing all the way through.

6. Add pepper and garlic powder to zucchini.

7. Once the cast iron skillet is very hot, lay down your zucchini searing for 5-7 minutes per side or until you get that nice brown charred look. Enjoy!
