Cucumber & Dill Tzatziki


  • 5 Tbsp greek yogurt

  • 1 medium cucumber, peeled and grated

  • 2 Tbsp fresh dill, chopped

  • 1 1/2 Tbsp extra virgin olive oil

  • 2 garlic cloves, minced

  • half of a lemon juice

  • salt, to taste


  1. Peel and grate the cucumber and sprinkle a pinch of salt to it. Let it rest for about 10 minutes.

  2. Using a cheesecloth or a cloth napkin, spoon the grated cucumber into it and squeeze it to remove as much moisture as possible.

  3. In a small bowl, mix the greek yogurt with the garlic cloves, extra virgin olive oil, and lemon juice. Stir until combined. Once combined, add the grated cucumber.

  4. Using a sharp knife, chop the fresh dill and then add it to the yogurt mixture. Stir until combined.
