Cucumber & Radish Carpaccio

Ingredients:

  • 1 small cucumber, thinly sliced

  • 2 small radishes, thinly sliced

  • 1/2 cup baby arugula

  • goat cheese, optional

  • drizzle of extra virgin olive oil

  • walnuts, chopped

  • pepper, to taste

Directions:

  1. Using a mandolin or a sharp knife, thinly slice cucumber and radishes.

  2. Arrange cucumber and radish slices on a plate.

  3. Add the baby arugula, goat cheese and chopped walnuts on top.

  4. Drizzle with olive oil and season with pepper to taste.
