1 small cucumber, thinly sliced
2 small radishes, thinly sliced
1/2 cup baby arugula
goat cheese, optional
drizzle of extra virgin olive oil
pepper, to taste
Using a mandolin or a sharp knife, thinly slice cucumber and radishes.
Arrange cucumber and radish slices on a plate.
Add the baby arugula, goat cheese and chopped walnuts on top.
Drizzle with olive oil and season with pepper to taste.
