Curry Chicken Salad -
1lb chicken tenders
1.5 tbsp curry powder
1/4 cup raisins
handful of Brazil nuts
1 cup Greek yogurt
2 stalks of celery
salt and pepper to taste
Cook chicken tenders for 7-9 minutes on each side at 450F.
In a large bowl mix together all ingredients except the chicken.
Once the chicken cools, cut into smaller pieces and add to the mix.
Stir together and let sit in fridge for 15-20 minutes before serving.
Enjoy on favorite bread, in a lettuce wrap, or on top of any yummy salad!
