1/2 cup gluten-free rolled oats
1/4 cup walnuts
2 teaspoons ground flaxseed
1/4 cup runny tahini
1/4 teaspoon cinnamon
pinch of cardamom (optional)
dash of salt
splash of vanilla extract
2-3 dates (depending on their size and how sweet you want the balls to be)
1 tablespoon cacao nibs
Add all ingredients except cacao nibs to a food processor and pulse until a crumb forms.
Add a splash or two of water and cacao nibs and pulse again until the dough forms a large ball.
Roll the dough into small balls and refrigerate. Enjoy!
