Deconstructed Spring Roll Salad with Sesame-Soy Tahini Dressing




Deconstructed Spring Roll Salad Ingredients:

  • romaine lettuce, chopped

  • radishes

  • avocado

  • shredded carrots

  • cucumber

  • mint leaves

  • choice of protein (salmon, shrimp, chicken, tofu)

Directions:

  1. Add all ingredients to a large bowl and drizzle with sesame-soy tahini dressing.


Sesame-Soy Tahini Dressing Ingredients:

  • 1/3 cup tahini

  • 1/4 cup water

  • 2 teaspoons rice vinegar

  • 1-2 Tbsp tamari (or soy sauce)

  • 1 Tbsp sesame oil

  • 1 Tbsp honey

  • 1 Tbsp fresh grated ginger (or more to taste)

  • 1 Tbsp sesame seeds

  • 1 teaspoon sriracha (optional)

Directions:

  1. Whisk all ingredients together in a mixing bowl until well combined.

  2. Serve over the salad!
