Deconstructed Spring Roll Salad Ingredients:
romaine lettuce, chopped
radishes
avocado
shredded carrots
cucumber
mint leaves
choice of protein (salmon, shrimp, chicken, tofu)
Directions:
Add all ingredients to a large bowl and drizzle with sesame-soy tahini dressing.
Sesame-Soy Tahini Dressing Ingredients:
1/3 cup tahini
1/4 cup water
2 teaspoons rice vinegar
1-2 Tbsp tamari (or soy sauce)
1 Tbsp sesame oil
1 Tbsp honey
1 Tbsp fresh grated ginger (or more to taste)
1 Tbsp sesame seeds
1 teaspoon sriracha (optional)
Directions:
Whisk all ingredients together in a mixing bowl until well combined.
Serve over the salad!
