Serves 3-4
Ingredients:
Salad
8 oz orzo pasta
1 pint cherry tomatoes, halved
1 english cucumber, halved and sliced 1/4-inch thick
1/2 red onion, diced
1 can (15-oz.) chickpeas, drained and rinsed
1/3 cup basil, cut into ribbons
Dressing
1/4 cup extra-virgin olive oil
1 Tbsp red wine vinegar
2 Tbsp lemon juice
1 garlic clove, minced
1 teaspoon agave
1/4 teaspoon salt
freshly ground pepper
Directions:
Cook orzo according to the directions on the package. Then transfer to a large bowl to cool. Drizzle with olive oil and stir to prevent orzo from sticking
While orzo is cooling, prepare the tomatoes, cucumber, red onion, chickpeas, and basil
Add dressing ingredients to a mason jar and shake until well dispersed
Finally combine the orzo, tomatoes, cucumber, red onion, chickpeas, basil and dressing together
Serve and enjoy!
