1/2 lb fresh shrimp
1/2 head of broccoli
1/2 cup olive oil
1 1/2 Tbsp garlic, minced
1 lemon, juiced
1/2 Tbsp fresh parsley, chopped
salt, to taste
Preheat oven to 375 degrees F.
Mix the olive oil, garlic, lemon juice, parsley, and salt in a bowl.
Spread the broccoli evenly across a baking sheet.
Coat the broccoli with a little less than half of the olive oil mixture, saving the other half for the shrimp.
Place the broccoli in the oven for 20-30 minutes.
Mix the shrimp into the bowl with the olive oil mixture.
Place a large pan on the stove on medium heat.
Place the shrimp and the oil in the pan, sautéing the shrimp for about two minutes each side.
Remove the shrimp and broccoli from heat.
Serve together with chopped parsley and lemon.
