Green Beans with Toasted Almonds


  • 1/2 lb green beans, rinsed

  • 2 garlic cloves, minced

  • 1/4 cup sliced almonds

  • 1 Tbsp olive oil

  • 1 Tbsp coconut aminos

  • salt, to taste

  • pepper, to taste

  • lime, optional


  1. Bring a pot of water to boil and add a small amount of salt to the water.

  2. Fill a bowl with some water and ice. Set aside.

  3. Once boiling, add the green beans and cook them about 2-3 minutes, then quickly transfer them to the bowl with water and ice.

  4. Mince the garlic cloves.

  5. Add some olive oil to a saucepan on medium-high heat. Once it’s hot, add the minced garlic and sliced almonds, and sauté for a few minutes.

  6. Add the green beans and cook for about 3 extra minutes. Adjust to taste with salt and pepper.

  7. Squeeze some lime juice on top if desired.
