2 Tbsp goat cheese (or vegan cheese of choice)
1 Tbsp fresh chives, chopped
1/2 Tbsp fresh parsley, chopped
salt, to taste
pepper, to taste
Whisk the eggs in a small bowl. Add the fresh chives and parsley.
Add salt and pepper, to taste, and keep whisking until combined.
Heat up a small, non-stick pan on medium-high heat. Pour the egg mixture into the pan and cook for 1 minute. Add cheese and cook until you reach your desired doneness.
