Herb + Goat Cheese Omelet


  • 2 eggs

  • 2 Tbsp goat cheese (or vegan cheese of choice)

  • 1 Tbsp fresh chives, chopped

  • 1/2 Tbsp fresh parsley, chopped

  • salt, to taste

  • pepper, to taste


  1. Whisk the eggs in a small bowl. Add the fresh chives and parsley.

  2. Add salt and pepper, to taste, and keep whisking until combined.

  3. Heat up a small, non-stick pan on medium-high heat. Pour the egg mixture into the pan and cook for 1 minute. Add cheese and cook until you reach your desired doneness.
