1/2 avocado or 1 tablespoon of veganaise
15 oz chickpeas, drained and rinsed
1 persian cucumber, chopped into small chunks
1 green onion, sliced
1 celery, chopped
2 radish, chopped into small chunks
1/4 cup herbs such as dill, basil, tarragon, and parsley, chopped
1 Tbsp or more of dijon mustard
juice from 1 lemon
red chili flakes
1/4 teaspoon pepper
1/8 teaspoon salt
Mash avocado in a medium-sized bowl.
Add remaining ingredients and toss well.
Taste and adjust for seasoning.
