Herby Chickpea Salad

Ingredients:

  • 1/2 avocado or 1 tablespoon of veganaise

  • 15 oz chickpeas, drained and rinsed

  • 1 persian cucumber, chopped into small chunks

  • 1 green onion, sliced

  • 1 celery, chopped

  • 2 radish, chopped into small chunks

  • 1/4 cup herbs such as dill, basil, tarragon, and parsley, chopped

  • 1 Tbsp or more of dijon mustard

  • juice from 1 lemon

  • red chili flakes

  • 1/4 teaspoon pepper

  • 1/8 teaspoon salt

Directions:

  1. Mash avocado in a medium-sized bowl.

  2. Add remaining ingredients and toss well.

  3. Taste and adjust for seasoning.
