Serves 2
Ingredients:
Honey Lemon Broccolini
2 bunches of broccolini
1 Tbsp extra virgin olive oil
2-3 minced garlic cloves
Juice of ½ lemon
1 Tbsp honey
Pinch of salt and pepper
Pinch of chili flakes (optional)
To serve:
¼ cup Goat’s cheese
¼ cup toasted flaked almonds
¼ cup fresh basil, roughly chopped
Directions:
Preheat oven to 400 Degrees F.
On a parchment lined baking tray, toss broccolini through EVOO, garlic, lemon juice, honey, salt and pepper, and chili flakes (optional).
Roast for 25-30 minutes, turning after 15 minutes.
On a small frying pan, toast the flaked almonds on low heat for 5 minutes until slightly golden.
Once the broccolini is ready, serve with crumbled goat’s cheese, toasted flaked almonds, and fresh basil. Enjoy!
