Lemon, Maple & Chia Baked Oats



Recipe (serves 4)


Ingredients

  • 1 1/4 cup rolled oats

  • 2 eggs

  • 2 tbsp chia seeds

  • 1/4 cup maple syrup

  • Juice of 1/2 lemon (add more to make it a stronger lemon flavor)

  • 1 banana

  • 1 cup almond milk

  • 2 tsp baking powder

  • Dash of vanilla extract

  • Optional: 2 Tbsp cacao powder

To serve

  • Fresh berries

  • Maple syrup

  • Cinnamon (optional)

  • Nut butter (optional)

Directions

  1. Preheat the oven to 350F.

  2. In a high speed blender, add all the ingredients and blend until you get a creamy consistency.

  3. Divide the mixture evenly between oven-proof ramekins.

  4. Bake for 25-30 minutes, or until a knife comes out clean from the center.

  5. Serve with an extra drizzle of maple syrup (optional) and fresh berries. Enjoy!
