Recipe (serves 4)
1 1/4 cup rolled oats
2 tbsp chia seeds
1/4 cup maple syrup
Juice of 1/2 lemon (add more to make it a stronger lemon flavor)
1 cup almond milk
2 tsp baking powder
Dash of vanilla extract
Optional: 2 Tbsp cacao powder
Nut butter (optional)
Preheat the oven to 350F.
In a high speed blender, add all the ingredients and blend until you get a creamy consistency.
Divide the mixture evenly between oven-proof ramekins.
Bake for 25-30 minutes, or until a knife comes out clean from the center.
Serve with an extra drizzle of maple syrup (optional) and fresh berries. Enjoy!
