Ingredients:
Salad:
4 cups chopped kale, stems removed
2 apples sliced
1/4 cup pumpkin seeds
1/2 avocado
3-4 Tbsp dried cranberries
Dressing:
1/4 cup olive oil
1 lemon, squeezed (reserve 1 teaspoon to massage kale)
3 garlic cloves, minced
2 Tbsp red wine vinegar
1 Tbsp dijon mustard
1/2 teaspoon oregano
1/4 teaspoon salt
Few grinds of pepper
Directions:
Make dressing by adding all ingredients to a Mason Jar and shake until well dispersed. Remember to reserve 1 teaspoon of lemon juice.
Add chopped kale to a large bowl and add reserved lemon juice. Using your hands, massage lemon into kale for about 2-3 minutes until leaves are bright green and tender.
To the kale, add remaining salad ingredients and mix to fully combine components.
Top kale salad with lemon dressing and mix again to fully combine. Adjust taste to preference and enjoy!
