Ingredients:
1 1/2 cups cooked lentils
1-2 celery stalks, finely chopped
1/4 red onion, finely chopped
1/2 tomato, chopped
1 Tbsp dijon mustard
sea salt
black pepper
Directions:
Cook lentils to package instructions (or buy pre-cooked).
Chop celery, onion, and tomato. Mix with cooked lentils, dijon mustard, sea salt, and pepper.
Serve over a bed of greens with avocado and your favorite dressing!
