Lentil Salad

Ingredients:

  • 1 1/2 cups cooked lentils

  • 1-2 celery stalks, finely chopped

  • 1/4 red onion, finely chopped

  • 1/2 tomato, chopped

  • 1 Tbsp dijon mustard

  • sea salt

  • black pepper

Directions:

  1. Cook lentils to package instructions (or buy pre-cooked).

  2. Chop celery, onion, and tomato. Mix with cooked lentils, dijon mustard, sea salt, and pepper.

  3. Serve over a bed of greens with avocado and your favorite dressing!
