¼ cup chia seeds
1 cup of full fat coconut milk
1 teaspoon vanilla extract
½ cup sliced fresh mango
1 teaspoon maple syrup (optional)
1 teaspoon shredded coconut (optional)
In an airtight container or glass jar, mix the chia seed pudding ingredients together until well combined.
Refrigerate overnight, or for at least 3-4 hours.
Remove from the fridge and serve with slices of fresh mango, almonds, maple syrup, and shredded coconut (optional).
