Mango Coconut Chia Seed Pudding


  • ¼ cup chia seeds

  • 1 cup of full fat coconut milk

  • 1 teaspoon vanilla extract

Topping ideas:

  • ½ cup sliced fresh mango

  • Almonds (optional)

  • 1 teaspoon maple syrup (optional)

  • 1 teaspoon shredded coconut (optional)


  1. In an airtight container or glass jar, mix the chia seed pudding ingredients together until well combined.

  2. Refrigerate overnight, or for at least 3-4 hours.

  3. Remove from the fridge and serve with slices of fresh mango, almonds, maple syrup, and shredded coconut (optional).
