Oven Baked Rosemary Veggie Chips


  • 1 sweet potato, thinly sliced

  • 1 beet, thinly sliced

  • 1 zucchini, thinly sliced

  • 2 Tbsp fresh rosemary, chopped

  • 1 Tbsp onion powder

  • 1 Tbsp olive oil

  • garlic, to taste

  • pepper, to taste


  1. Preheat oven to 375F.

  2. Using a sharp knife or a mandolin, thinly slice the sweet potato, beet, and zucchini. Place them in a mixing bowl and set aside.

  3. Season the veggie slices in the mixing bowl with the chopped rosemary, onion powder, olive oil, salt, and pepper. Make sure they are evenly coated.

  4. Place them on a parchment lined baking sheet and take them to the oven for 35-40 minutes.
