Oven Roasted Sweet Potato & Beet


  • 1 medium sized sweet potato

  • 1 medium sized beet

  • 2 Tbsp olive oil

  • 1 1/2 Tbsp paprika powder

  • 1/2 Tbsp onion powder

  • 1/2 Tbsp garlic powder

  • 1 teaspoon turmeric powder

  • Fresh rosemary, chopped

  • Honey

  • Fresh parsley, chopped

  • Feta cheese, optional


  1. Preheat oven to 375F.

  2. Peel the sweet potato and beet. Using a sharp knife cut them into cubes.

  3. In a large mixing bowl, combine the olive oil, paprika powder, onion powder, garlic powder, and turmeric powder with the sweet potato and beet. Make sure all cubes are covered with the seasoning.

  4. Place them on a parchment lined baking sheet and sprinkle with chopped fresh rosemary.

  5. Take them to the oven for 35-40 minutes.

  6. Once time has passed, remove them from the oven. Plate them and garnish with chopped parsley, a drizzle of honey, and feta cheese.
