Ingredients
2 cups arugula
1 peach, sliced
1/3 cup snap peas, chopped
2 Tbsp basil, chiffonade
2 Tbsp toasted walnuts, chopped
2 Tbsp goat cheese, crumbled
balsamic vinaigrette, drizzled
Balsamic vinaigrette
1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 tsp dijon mustard
1/2 tsp honey
1 clove garlic, minced
pinch of salt
pepper, to taste
Directions
Add arugula, peaches, snap peas, basil, walnuts, and goat cheese to a bowl.
Make dressing: Combine all dressing ingredients in a jar or bowl, and whisk until emulsified.3. Drizzle dressing on top of salad. Enjoy!
