Peach & Arugula Salad




Ingredients

  • 2 cups arugula

  • 1 peach, sliced

  • 1/3 cup snap peas, chopped

  • 2 Tbsp basil, chiffonade

  • 2 Tbsp toasted walnuts, chopped

  • 2 Tbsp goat cheese, crumbled

  • balsamic vinaigrette, drizzled


Balsamic vinaigrette

  • 1/4 cup olive oil

  • 1/4 cup balsamic vinegar

  • 1/2 tsp dijon mustard

  • 1/2 tsp honey

  • 1 clove garlic, minced

  • pinch of salt

  • pepper, to taste


Directions

  1. Add arugula, peaches, snap peas, basil, walnuts, and goat cheese to a bowl.

  2. Make dressing: Combine all dressing ingredients in a jar or bowl, and whisk until emulsified.3. Drizzle dressing on top of salad. Enjoy!
