
Ingredients:
1/2 cup quinoa, rinsed
1 cup of water
salt, to taste
a small bunch of fresh parsley, chopped
5 pitted dates, chopped
1 1/2 teaspoon capers, chopped
half of a lemon juice
Directions:
Cook your quinoa by combining quinoa with 1 cup of water and a pinch of salt. Bring to a boil until cooked (about 20-25 minutes, follow box instructions).
Using a sharp knife, chop 1/2 cup pistachios into thin pieces. Chop the parsley, dates, and capers as well. Set aside.
Once the quinoa is done cooking, fluff with a fork and transfer to a mixing bowl.
Add the chopped pistachios, parsley, dates, and capers and combine thoroughly. Squeeze with lemon juice.
