Pistachio & Dates Quinoa


  • 1/2 cup quinoa, rinsed

  • 1 cup of water

  • salt, to taste

  • a small bunch of fresh parsley, chopped

  • 5 pitted dates, chopped

  • 1 1/2 teaspoon capers, chopped

  • half of a lemon juice


  1. Cook your quinoa by combining quinoa with 1 cup of water and a pinch of salt. Bring to a boil until cooked (about 20-25 minutes, follow box instructions).

  2. Using a sharp knife, chop 1/2 cup pistachios into thin pieces. Chop the parsley, dates, and capers as well. Set aside.

  3. Once the quinoa is done cooking, fluff with a fork and transfer to a mixing bowl.

  4. Add the chopped pistachios, parsley, dates, and capers and combine thoroughly. Squeeze with lemon juice.
