1 cup uncooked white quinoa, rinsed
1 cup coconut chips
1 cup sliced almonds
1/2 cup raisins
1/2 cup raw pumpkin seeds
1/4 cup chia seeds
3 Tbsp olive oil
1 Tbsp maple syrup
2 teaspoons vanilla extract
1/2 teaspoon salt
Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
In a large bowl mix the olive oil, maple syrup, vanilla, and salt together. Fold in the remaining ingredients until well combined.
Transfer the mixture to the baking sheet and spread granola mixture into a thin layer. Press granola down using a spatula to compress.
Bake granola for about 30-35 minutes until golden, being sure to check halfway.
Allow to cool for at least 10 minutes and enjoy!
