Quinoa, Kale, and Chickpea Bowl


  • ½ cup uncooked brown rice

  • ¼ cup broccoli

  • ¼ cup sliced carrot

  • ¼ cup kale

  • ½ can chickpeas

  • ½ avocado

  • Olive oil

  • Salt and pepper


  1. Preheat the oven to 400 degrees F. Place broccoli and chickpeas on a baking sheet lined with parchment paper. Pour olive oil on top, along with the salt and pepper.

  2. Bake for 20-25 minutes in the oven.

  3. Prepare the brown rice by following the instructions on the package.

  4. Make the sauce by whisking tahini, water, lemon juice, coconut amino acids, and maple syrup.

  5. Add it all together in a bowl, drizzle sauce on top, and enjoy!
