Roasted Carrot Hummus


  • 10 medium carrots, peeled and sliced

  • 2 Tbsp olive oil

  • 1 teaspoon salt

  • 1 teaspoon cumin

  • Crack of of black pepper

  • ¼ cup tahini

  • 2 garlic cloves

  • 1 lemon, juiced

  • 1 Tbsp olive oil

  • 2-3 Tbsp water, more if needed

  • ½ teaspoon salt


  1. Preheat the oven to 400 degrees F. Place carrots on a large baking sheet. Drizzle with olive oil and season with salt, cumin and black pepper.

  2. Roast carrots for 35 minutes until golden brown.

  3. Once the carrots are done, add to the food processor along with tahini, garlic cloves, lemon juice, olive oil, water and salt.

  4. Blend until creamy and well combined. Scrape down sides as needed.

  5. Season with salt as desired, and enjoy with your choice of vegetables or crackers!
