Roasted Delicata







Ingredients:

  • 2-3 Delicata squash

  • 2 Tbsp olive oil

  • 1 teaspoon coconut oil

  • 1 teaspoon cinnamon

  • 1 teaspoon maple syrup

  • Sea salt & pepper


Directions:

  1. Preheat oven to 425 F.

  2. Cut top and bottom off of each squash.

  3. Slice in half lengthwise. Scoop out seeds.

  4. Add remaining ingredients into a large bowl and adjust taste as desired.

  5. Slice into ½ inch half rings and add to seasoning mixture. Toss to combine.

  6. Put delicata squash onto baking sheet and cook for 25-30 minutes until brown.
