2-3 Delicata squash
2 Tbsp olive oil
1 teaspoon coconut oil
1 teaspoon cinnamon
1 teaspoon maple syrup
Sea salt & pepper
Preheat oven to 425 F.
Cut top and bottom off of each squash.
Slice in half lengthwise. Scoop out seeds.
Add remaining ingredients into a large bowl and adjust taste as desired.
Slice into ½ inch half rings and add to seasoning mixture. Toss to combine.
Put delicata squash onto baking sheet and cook for 25-30 minutes until brown.
