1 cup cooked lentils, rinsed and drained
1 bunch of broccolini
1/2 cup of frozen green peas
1 garlic clove
salt, to taste
pepper, to taste
roasted sliced almonds
Preheat oven to 350F.
Place cooked lentils on a parchment lined baking sheet and take to the oven for about 20 minutes.
Place sliced almonds on a parchment lined baking sheet and take to the oven for 10 minutes.
On a sauce pan, add some olive oil and sauté broccolini with minced garlic. To this, add the frozen green peas. You may add some salt and pepper if desired.
Plate the toasted lentils and add the sautéed broccolini and green peas on top.
Top it off with sliced almonds and drizzle with some tahini and lemon juice.
