Serves 1
Ingredients:
½ head of kale, finely chopped
¼ cup of walnuts chopped
¼ cup of pumpkin seeds chopped
¼ cup of dried cranberries
¼ cup of blue cheese
½ lemon
1 tablespoon olive oil
Salt and pepper to taste
Directions:
To a bowl, add your chopped kale and massage for 5 minutes with olive oil.
Let kale rest for 20 minutes.
After 20 minutes have passed, add your walnuts, pumpkin seeds, cranberries, and blue cheese.
Juice ½ lemon on top and season with salt and pepper to taste. Add any additional desired dressing. Enjoy!
