Spaghetti Squash Bolognese


◦ 1 spaghetti squash

◦ 1 tablespoon olive oil

◦ 1 lb ground chicken or turkey

◦ 2 cloves garlic minced

◦ 1/2 white onion chopped

◦ 1 cup marinara sauce

◦ Salt and pepper to taste

◦ Parmesan cheese


1. Preheat oven to 400 degrees.

2. Slice the spaghetti squash in half long ways.

3. Scoop out the seeds.

4. Drizzle squash with half of your olive oil and sprinkle with salt and pepper.

5. Place the spaghetti squash cut side down on a baking sheet and roast in the oven for 40 minutes until lightly browned on the outside and fork tender.

6. While the squash is roasting, add the rest of the olive oil to a pan and heat over medium heat.

7. After pan is heated, add in onion and garlic stirring frequently for a few minutes until onions are translucent.

8. Add in ground chicken or turkey and cook for 5-7 minutes breaking it apart.

9. Add marinara sauce and mix together, adding salt and pepper to taste.

10. Scoop your bolognese sauce into the spaghetti squash. Top with grated Parmesan cheese and enjoy!
