1/2 red bell pepper, chopped
1 cup baby spinach, chopped
2 1/2 Tbsp goat cheese, optional
salt, to taste
pepper, to taste
Preheat the oven to 350 degrees F.
Using a sharp knife, chop the red bell pepper and baby spinach into tiny pieces and set them aside.
In a large mixing bowl, whisk together the eggs and season with salt and pepper, to taste.
To the egg mixture, add the chopped red bell pepper, spinach, and goat cheese, and whisk to thoroughly combine.
Pour the egg mixture evenly across the muffin tins and place in the oven for about 20 minutes.
