Steak taco lettuce wraps with sweet potato, guac, and sautéed red pepper🌶️
-1 grass fed organic steak
-1 medium sweet potato cubed
-1/4 cup cilantro
-Juice of 1 lime
-1 red pepper
-2 large leaves of collard greens
-1 tbsp EVOO or butter (or as much or as little as
desired to cook with)
sea salt to taste
-1 head of red butter lettuce to use as the tortilla
Preheat oven to 450 F and roast chopped sweet potato for 20 minutes.
On medium heat, saute chopped red pepper and collard greens with EVOO, salt, and pepper for 5-7 minutes.
Cut steak into 1 inch strips and coat each side with salt and pepper. Then cook on medium heat for 3-5 minutes each side.
For the guac, mix the avocado, cilantro, and lime juice together then add salt and pepper to taste.
Layer all ingredients onto the butter lettuce wraps and enjoy!
