Stuffed Peppers

Serves 6


  • 1 tablespoon of extra virgin olive oil

  • 1 lb ground turkey

  • 6 red bell peppers

  • 1 cup brown rice cooked

  • ½ white onion finely chopped

  • 2 garlic cloves minced

  • 1 cup marinara

  • ¼ cup shredded mozzarella

  • 4 tablespoons finely chopped parsley

  • Salt and pepper to taste


  1. Cook brown rice as package instructs.

  2. Heat oven to 400℉.

  3. Heat one tablespoon of olive oil over medium heat.

  4. Add onion and garlic and saute for about 2 minutes.

  5. Add ground turkey and cook for another 5 minutes or until cooked through, breaking it apart while cooking.

  6. Add marinara sauce.

  7. Add cooked brown rice.

  8. Add salt and pepper to taste.

  9. Cut tops of peppers off and seed the peppers.

  10. Spoon meat and rice mixture into the peppers and place in baking dish.

  11. Sprinkle shredded mozzarella on each pepper.

  12. Pour a small amount of water into the bottom of the baking dish - about ½ inch into bottom of baking pan.

  13. Cover baking dish with aluminum foil and bake for about 45 minutes.

  14. Carefully remove foil, top with parsley, and enjoy!
