Summer Bean Salad

Serves 2

Ingredients:

  • 1/4 cup corn

  • 1/4 black beans

  • 1/4 cup chickpeas

  • 1/2 avocado, diced

  • 1/2 cup red onion, chopped

  • about 6 grape tomatoes, halved

  • 2 Tbsp red wine vinegar

  • 1 Tbsp olive oil

Directions:

  1. Cook your beans, or rinse and drain, if you're using canned or boxed.

  2. Once the beans are cleaned, mix the corn, beans, chickpeas, avocado, onion, and tomatoes in a large bowl.

  3. Whisk together the red wine vinegar and olive oil.

  4. Pour the dressing over the bean salad.
