Serves 2
Ingredients:
1/4 cup corn
1/4 black beans
1/4 cup chickpeas
1/2 avocado, diced
1/2 cup red onion, chopped
about 6 grape tomatoes, halved
2 Tbsp red wine vinegar
1 Tbsp olive oil
Directions:
Cook your beans, or rinse and drain, if you're using canned or boxed.
Once the beans are cleaned, mix the corn, beans, chickpeas, avocado, onion, and tomatoes in a large bowl.
Whisk together the red wine vinegar and olive oil.
Pour the dressing over the bean salad.
