Sweet Potato and Black Bean Tacos


  • 1 medium sweet potato, cubed

  • 2 Tbsp olive oil

  • 1 yellow onion, diced

  • 3 garlic cloves, minced

  • 2 bell peppers, diced

  • 1 (15-oz.) can black beans, drained and rinsed

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon cumin

  • 1/2 cup salsa

  • Corn tortillas


  1. Preheat the oven to 425 degrees F. Peel and cube the sweet potato and place on a baking sheet. Roast for about 25-30 minutes until tender.

  2. Heat the olive oil in a pan over medium heat and cook onion and garlic for 3-4 minutes. Once translucent, add the black beans, peppers, spices and salsa together.

  3. Continue to cook over medium heat until peppers are cooked and beans are warm, 7-10 minutes.

  4. Dollop mix onto warm tortillas, add your desired toppings (like guacamole, salsa, cheese, cilantro) and enjoy!
