1 medium sweet potato, cubed
2 Tbsp olive oil
1 yellow onion, diced
3 garlic cloves, minced
2 bell peppers, diced
1 (15-oz.) can black beans, drained and rinsed
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 cup salsa
Preheat the oven to 425 degrees F. Peel and cube the sweet potato and place on a baking sheet. Roast for about 25-30 minutes until tender.
Heat the olive oil in a pan over medium heat and cook onion and garlic for 3-4 minutes. Once translucent, add the black beans, peppers, spices and salsa together.
Continue to cook over medium heat until peppers are cooked and beans are warm, 7-10 minutes.
Dollop mix onto warm tortillas, add your desired toppings (like guacamole, salsa, cheese, cilantro) and enjoy!
