1 cup sweet potato, cubed
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
1/4 cup white onion, chopped
handful of kale
1/2 Tbsp parsley, chopped
1 Tbsp extra virgin olive oil
Heat the olive oil in a large pan over medium heat.
Once the oil is hot, but not smokey, add your sweet potatoes and sauté until tender to touch (about 15 minutes).
Add your bell peppers, onion, and parsley, sautéing for about 3 minutes.
Add your kale.
Make room for your eggs and crack in between the vegetables.
Season with salt and pepper.
Cook until almost done, remove from heat, and cover for about 2 minutes.
Remove the lid and serve.
