3 zucchinis, sliced
2 small eggplants, sliced
tomato sauce such as roa's arrabbiata
lasagna sheets such as explore cuisine green lentil lasagna (use oven ready sheets or boil ahead)
serve with roasted broccoli and side salad
Preheat oven to 400 degrees F.
In a skillet, heat olive oil and brown sliced zucchini and eggplant.
Once cooked on both sides remove from heat.
In a baking dish, layer a good amount of tomato sauce followed by lasagna sheets, then eggplant and zucchini, and then cheese.
Layer sauce again followed by lasagna sheets, eggplant and zucchini, spinach, more red sauce, and more cheese.
Bake for 45 minutes to an hour or until lasagna is cooked through and cheese is golden brown. Enjoy!
