Veggie "Fried" Rice





Ingredients:

  • cooked rice (recipe below if you don't have cooked rice)

  • beet greens (or swiss chard/kale), chopped

  • olive oil

  • red chili flakes

  • cilantro, roughly chopped

  • lemon segments (rind removed and flesh cut into small chunks)

  • salt

  • pepper

Directions:

  1. Place 2 cups of basmati rice in a pot and rinse 3-4 times or until water runs clear.

  2. Add 2 cups of filtered water, 1/2 teaspoon of salt, and 1 tablespoon of oil. Stir.

  3. Bring to a boil and then lower to simmer. Cook until most of the water has evaporated. Place the lid partially off of the pot and continue to cook. Once water has completely evaporated, turn the heat off and allow the rice to steam.

  4. Once rice is cooked, fluff with a fork. Taste for salt.

  5. Add chopped greens to a sauté pan and cook for a few minutes with a squeeze of lemon.

  6. Add oil, chili flakes, and cooked rice. Sauté until greens are wilted.

  7. Add in cilantro and lemon segments. Season with salt and pepper.

  8. Taste and adjust for seasoning.

P.S. - can always add whatever veggies you have on hand!
