Veggie & Tuna Patties




Ingredients:

  • 2 5-oz cans of tuna

  • 1 green bell pepper, diced

  • 1 medium carrot, shredded

  • 1/2 yellow onion, diced

  • 1 garlic clove, minced

  • 1/4 cup chopped scallions

  • 2 eggs

  • 3/4 cup almond flour

  • 1 1/2 Tbsp onion powder

  • 1 1/2 Tbsp garlic powder

  • 1 Tbsp paprika powder

  • salt, to taste

  • pepper, to taste

Directions:

  1. Preheat oven to 350F.

  2. Using a sharp knife, chop the green bell pepper, yellow onion, garlic, and scallion. Using a grater, shred the carrot. Set all vegetables aside.

  3. Pour a small amount of oil in a pan over medium-high heat. Once hot, add the chopped vegetables and shredded carrot. Sauté until the yellow onion is translucent.

  4. In a large mixing bowl, add the tuna and using a fork break it into small pieces.

  5. Add the sautéed vegetables into the mixing bowl with the tuna and combine. Then, add the two eggs and combine again.

  6. Add the onion powder, garlic powder, paprika powder, salt and pepper to taste. Add the almond flour and combine all together.

  7. Form the patties (this recipe yields about 4 regular-sized patties) and sear them on a pan in a small amount of olive oil over medium high heat for about 4-5 minutes per side.

  8. Place the seared patties on a parchment lined baking sheet. Place them in the oven for 10 minutes. Serve hot.
