Spiced Oatmeal


Ingredients:

  • 1/2 cup rolled oats

  • 1 cup almond milk

  • 2 Tbsp cinnamon

  • 1/2 Tbsp nutmeg

  • 1 teaspoon vanilla extract

  • 1 red apple

  • 2 Tbsp honey

  • almonds, optional

  • granola, optional

Directions:

  1. Preheat oven to 375 degrees F.

  2. Slice the apple in thin slices and place them on a parchment-lined baking sheet.

  3. Sprinkle 1 Tbsp of cinnamon and 2 Tbsp of honey onto the apple slices and place them in the oven for 15 minutes.

  4. While the apples are roasting, pour the almond milk into a pot and add in the rolled oats. Place on low-medium heat.

  5. Stir the oat and milk mixture frequently for about 8-10 minutes. Once the milk has been absorbed, add 1 Tbsp cinnamon, 1/2 Tbsp nutmeg, and 1 teaspoon vanilla extract.

  6. Once the apples are roasted and fifteen minutes have passed, remove from the oven to cool.

  7. Place oatmeal in a bowl and top with roasted apples. Add almonds and granola, if desired.
