BBQ Chicken Salad






Serves 4-6

Ingredients:

• 1.5 lbs chicken breast

• 1/2 cup of unsweetened bbq sauce

• 1 Tbsp paprika

• 1 Tbsp onion powder

• 1 Tbsp garlic powder

• 1 teaspoon salt

• 1 teaspoon pepper

• 1 Tbsp parsley, finely chopped

• 1 Tbsp avocado oil

• 10 ounce container of mixed greens

• 1 cup cucumber chopped

• 1 cup tomato chopped

• 1 avocado


Directions:

1. Preheat the oven to 425℉.

2. Using a paper towel, pat your chicken dry.

3. In a large mixing bowl, combine all seasoning and spices.

4. Add chicken into a mixing bowl, and with your hands, generously rub the seasoning coating the chicken well.

5. Bake the chicken in the oven for 10 minutes at 425℉.

6. Reduce heat to 375℉ and remove the chicken from oven.

7. Brush ¼ cup of the barbecue sauce over the chicken making sure the chicken is evenly coated.

8. Bake for another 15 minutes.

9. Take the chicken out, flip it over, and brush another ¼ cup of barbecue sauce onto chicken. Again, make sure the chicken is evenly coated.

10. Cook for another 10-15 minutes or until the chicken is cooked through.

11. Place your chicken on a bed of mixed greens, cucumber, tomato, avocado, and any other veggies you like.

12. Top with parsley, your dressing of choice, and enjoy! (I love this salad with one of my Caesar dressing recipes on my site!)
