Serves 2
Ingredients:
2 cups romaine lettuce, chopped
1/2 english cucumber, chopped
1/2 roma tomato, chopped
1/4 red onion, chopped
1/4 cup kalamata olives, chopped
1/4 yellow bell pepper, chopped
1/2 teaspoon dried oregano
1/4 cup crumbled feta, optional
Directions:
Chop the romaine, cucumber, tomato, red onion, olives, and bell pepper.
Place in a large bowl, add the oregano and feta.
Toss well and top with Greek Vinaigrette.
