Chopped Greek Salad



Serves 2


Ingredients:

  • 2 cups romaine lettuce, chopped

  • 1/2 english cucumber, chopped

  • 1/2 roma tomato, chopped

  • 1/4 red onion, chopped

  • 1/4 cup kalamata olives, chopped

  • 1/4 yellow bell pepper, chopped

  • 1/2 teaspoon dried oregano

  • 1/4 cup crumbled feta, optional

Directions:

  1. Chop the romaine, cucumber, tomato, red onion, olives, and bell pepper.

  2. Place in a large bowl, add the oregano and feta.

  3. Toss well and top with Greek Vinaigrette.
