Endive & Radicchio Salad


  • endive leaves, kept whole or roughly chopped

  • radicchio, sliced thin

  • arugula

  • celery, sliced thinly

  • parmesan, shaved (optional)

  • walnuts

  • freshly squeezed orange juice

  • add-ons: soft-boiled eggs, chickpeas, tuna, salmon, chicken, quinoa


  1. Combine endive, radicchio, arugula, celery, parmesan, and walnuts in a large bowl. Squeeze some orange.

  2. Toss with lemon vinaigrette and add desired protein.
