endive leaves, kept whole or roughly chopped
radicchio, sliced thin
celery, sliced thinly
parmesan, shaved (optional)
freshly squeezed orange juice
add-ons: soft-boiled eggs, chickpeas, tuna, salmon, chicken, quinoa
Combine endive, radicchio, arugula, celery, parmesan, and walnuts in a large bowl. Squeeze some orange.
Toss with lemon vinaigrette and add desired protein.
