Greek Salad with Chicken
6oz chicken breast
1-2oz feta cheese
half a cucumber
handful of cherry tomatoes
2 tbsp balsamic or red wine vinegar
1 tbsp olive oil
dash of honey
handful red butter lettuce
salt and pepper to taste
Preheat the oven to 450F and cook the chicken for 15 minutes with olive oil, salt and pepper.
Chop the tomatoes, cucumbers, and feta cheese and add to bowl of red butter lettuce.
In a separate bowl mix together vinegar, honey, and olive oil and toss onto the salad. (Or use my Greek Vinaigrette recipe on my website)
Add the cooked chicken and enjoy!
